Brem: A Traditional Food from Madiun

 


   Have you ever tried brem? Brem is a unique snack from Madiun that melts immediately when it touches your mouth. This food leaves a refreshing sensation when eaten.

    Brem is a food made from fermented black sticky rice. The juice from the rice is cooked and dried. It is left to settle for about a day and night before it is ready. The sensation of this food appears when you put it in your mouth, it melts right away and disappears, leaving a unique taste on your tongue.

    There are a few types of brem available in the market, both as food and drink. The brem that is food is famous from Madiun and Wonogiri, while the drink form comes from Bali and Nusa Tenggara.

    The first known form of brem is a traditional food from Mejayan District, Wonoasri District, and Madiun. It come from two producing villages: Bancong and Kaliabu. Brem is packaged as yellowish slabs, usually about 15 cm in length, 5 cm high and 0.5 cm thickness in size. To improve marketing, brem is now also packaged in small candy-sized pieces, making it easy to carry in a pocket. In the 1980s, this type of brem was sold by street vendors at train stations in East Java.

    The second form of brem come from Wonogiri. It is shaped like a flat, flat round with an average diameter of 5 cm and a thickness of about 0.3 cm. Wonogiri brem is white and is dried by being directly exposed to the hot sun for three days.
